Ingredients

For the pumpkin:

500g pumpkin (or butternut squash), peeled & cut into wedges or cubes

2 tbsp olive oil

½ tsp ground cinnamon

½ tsp ground cumin

½ tsp smoked paprika

½ tsp ground coriander

Salt & black pepper to taste

For the toppings:

½ cup feta cheese, crumbled

¼ cup pomegranate seeds

2 tbsp fresh parsley or mint, chopped

2 tbsp toasted pumpkin seeds or walnuts

For the citrus drizzle:

2 tbsp orange juice

1 tbsp lemon juice

1 tbsp honey or maple syrup

2 tbsp extra virgin olive oil

Pinch of salt

Instructions

Roast the Pumpkin:

Preheat oven to 200°C (400°F).

Toss pumpkin wedges with olive oil, cinnamon, cumin, paprika, coriander, salt, and pepper.

Spread on a baking tray lined with parchment paper.

Roast for 25–30 minutes, flipping halfway, until golden and tender.

Prepare Citrus Drizzle:

In a small bowl, whisk together orange juice, lemon juice, honey, olive oil, and salt until emulsified.

Assemble the Dish:

Arrange roasted pumpkin on a serving plate.

Sprinkle with crumbled feta, pomegranate seeds, and fresh herbs.

Drizzle with citrus dressing.

Top with pumpkin seeds/walnuts for crunch if using.
