Spicy and Creamy Cajun White Chicken Chili: A Flavor-Packed Comfort Dish
recipe By raven
Ingredients:
For the Chili:
- 1 lb of boneless, skinless chicken breasts or thighs, cut into small chunks
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans (like cannellini or great northern), drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 teaspoon of Cajun spice blend (adjust according to your taste)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 tablespoon of cornstarch blended with 2 tablespoons of water (optional)
- Salt and pepper to taste
For Thickening:
- 1/2 cup heavy cream
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional)
For Garnish:
- Fresh cilantro, chopped
Method:
- Cook the Chicken: Put a large saucepan or Dutch oven over medium-high heat and add the olive oil. Season the chicken pieces with a little pinch of salt and pepper before adding them to the saucepan. Cook the chicken for five to seven minutes, or until it is cooked through and browned all over.
- Add the chopped onion, red bell pepper, green bell pepper, and minced garlic to the same saucepan and sauté the vegetables. The veggies should be sautéed for around five minutes, or until the onion becomes translucent and the veggies start to soften.
- Add the Spices: Mix in the dried oregano, ground cumin, smoked paprika, cayenne pepper (if using), and Cajun spice. Allow the flavours to blend by cooking the spices and veggies together for one to two minutes
- Pour in the chicken stock, scraping down the pot’s bottom to loosen any browned pieces (this adds flavour!). Then add the beans. Add the can of chopped tomatoes with green chillies and the drained white beans. After the chicken has finished cooking, add it back to the saucepan and toss everything together.
- Simmer the Chilli: After bringing the chilli to a low boil, turn down the heat. To bring out the flavours and ensure that all of the ingredients are cooked thoroughly, cover the saucepan and simmer the chilli for 25 to 30 minutes.
- Optional: If you’d like your chilli to be thicker, whisk in the heavy cream and cornflour combination. Stirring constantly, cook for a further five minutes or until the consistency of the chilli is reached
- Season to Taste: If necessary, add more salt, pepper, or Cajun spice after tasting the chilli
- Pour the spicy Cajun White Chicken Chilli into bowls and top with finely chopped cilantro. For a full dinner, serve over rice or with tortilla chips and crusty toast
