Spinach & White Bean Patties with Yogurt Sauce
These patties are made with protein-rich white beans and fresh spinach, lightly seasoned with Mediterranean herbs. Pan-seared or baked, they’re golden and satisfying, served with a cool garlic-lemon yogurt sauce. Great as a main, in wraps, or with salad.

Patties
1 cup cooked white beans (cannellini or navy), drained
1½ cups fresh spinach, finely chopped
1 small onion, finely chopped
1 clove garlic, minced
1 egg (or flax egg for vegan)
¼ cup breadcrumbs or oat flour
2 tbsp grated parmesan (optional)
1 tbsp olive oil
1 tsp dried oregano
½ tsp dried thyme or basil
Salt & black pepper, to taste
Lemon zest (optional)
Yogurt Sauce
¾ cup Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 small garlic clove, grated
Salt, to taste
Fresh dill or parsley, finely chopped
👩🍳 Instructions
Make the Patties
1️⃣ Prepare spinach
Sauté spinach in a dry pan for 1–2 minutes until wilted. Let cool and squeeze out excess moisture.
2️⃣ Mash beans
In a bowl, mash white beans until mostly smooth but slightly chunky.
3️⃣ Mix
Add spinach, onion, garlic, egg, breadcrumbs, cheese (if using), olive oil, herbs, salt, pepper, and lemon zest. Mix well.
4️⃣ Shape
Form into 8 small patties. Chill 10 minutes if mixture feels soft.
5️⃣ Cook
Pan-fry: Cook in olive oil over medium heat, 3–4 minutes per side until golden.
Bake: 190°C (375°F) for 18–20 minutes, flipping halfway.
Air fryer: 180°C for 12–14 minutes.
Make the Yogurt Sauce
6️⃣ Stir
all sauce ingredients until smooth. Chill for best flavor.
