Street Corn Chicken Rice Bowl
Ingredients:
1 cup cooked rice (white, brown, or jasmine)
1 chicken breast or thigh, grilled or pan-cooked, sliced
1 cup corn kernels (fresh or frozen)
1/4 cup mayonnaise
1/2 lime, juiced
1/4 cup cotija cheese or feta, crumbled
1 teaspoon chili powder (adjust to taste)
1 tablespoon chopped cilantro
Salt and pepper to taste
Optional: sliced avocado, diced red onion, or jalapeño for extra kick
Instructions:
Prepare the corn:
In a skillet over medium heat, cook the corn kernels until slightly charred (about 5 minutes). Stir in mayonnaise, lime juice, chili powder, salt, and pepper. Cook for another minute and remove from heat.
Cook the chicken:
Season chicken with salt, pepper, and a little chili powder. Grill or pan-fry until cooked through, then slice into strips.
Assemble the bowl:
Place the cooked rice at the bottom of the bowl. Top with the grilled chicken slices, then spoon the street corn mixture over it.
Finish:
Sprinkle with crumbled cotija cheese and chopped cilantro. Add any optional toppings like avocado or jalapeño
