Super Fresh Greek Chicken Bowl with Tzatziki Magic
This bowl brings together everything we love about Greek flavors — juicy lemon-herb chicken, refreshing cucumber and tomato, tangy feta, and a drizzle of creamy homemade tzatziki sauce. Ingredients
For the Chicken Marinade:
500g boneless chicken breasts or thighs
3 tbsp olive oil
2 tbsp lemon juice
1 tsp lemon zest
2 garlic cloves, minced
1 tsp dried oregano
½ tsp paprika
Salt and pepper to taste
For the Tzatziki Magic Sauce:
1 cup Greek yogurt
½ cucumber, finely grated and squeezed to remove water
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp fresh dill or mint, finely chopped
Salt and black pepper to taste
For the Bowl Base:
1 cup cooked basmati rice, brown rice, or quinoa
1 tbsp olive oil
Pinch of salt and lemon zest
For the Fresh Greek Toppings:
1 cup cherry tomatoes, halved
1 cucumber, diced
¼ small red onion, thinly sliced
½ cup feta cheese, crumbled
6–8 Kalamata olives
1 tbsp chopped parsley or mint
Instructions
Step 1: Marinate the Chicken
In a bowl, mix olive oil, lemon juice, zest, garlic, oregano, paprika, salt, and pepper.
Add chicken, coat well, and marinate for at least 30 minutes (up to 4 hours in the fridge).
Step 2: Grill the Chicken
Heat a grill pan or skillet over medium-high heat.
Grill chicken for 6–8 minutes per side until golden and cooked through (internal temp 75°C / 165°F).
Rest for 5 minutes, then slice into strips.
Step 3: Make the Tzatziki Magic Sauce
In a bowl, combine yogurt, grated cucumber, garlic, lemon juice, olive oil, dill/mint, salt, and pepper.
Mix well until creamy and chill until ready to serve.
Step 4: Prepare the Base
Warm cooked rice or quinoa in a bowl.
Drizzle a little olive oil and lemon zest for aroma.
Step 5: Assemble the Bowl
Start with a base of rice or quinoa.
Top with sliced grilled chicken.
Add tomatoes, cucumbers, onion, feta, and olives around the bowl.
Spoon a generous dollop (or drizzle) of tzatziki magic sauce on top.
Finish with a sprinkle of parsley or mint and a squeeze of lemon.
Notes & Tips
You can replace chicken with grilled shrimp or chickpeas for variety.
For a creamier tzatziki, mix in a spoon of olive oil and extra dill.
Add a few slices of avocado for a modern Mediterranean twist.
