Sweet Chili Chicken Recipe
Ingredients:
1.5 lbs (about 700g) chicken thighs or breasts, cut into bite-sized pieces
Salt & pepper to taste
2 tbsp cornstarch (for coating)
2 tbsp oil (vegetable or sesame)
For the Sweet Chili Sauce:
1/2 cup sweet chili sauce (store-bought or homemade)
2 tbsp soy sauce
1 tbsp rice vinegar or lime juice
1 tbsp honey or brown sugar (optional, for extra sweetness)
2 cloves garlic, minced
1 tsp grated ginger (optional for a kick)
1 tsp chili flakes (optional for heat)
Garnish (optional):
Chopped green onions
Sesame seeds
Lime wedges
Instructions:
Prep the Chicken:
Season the chicken pieces with salt and pepper.
Toss in cornstarch to lightly coat.
Sear the Chicken:
Heat oil in a large skillet or wok over medium-high heat.
Add chicken and cook until golden and crispy on the outside, and cooked through (about 6–8 minutes). Remove and set aside.
Make the Sauce:
In the same pan, reduce heat to medium.
Add garlic and ginger, sauté for 30 seconds.
Pour in sweet chili sauce, soy sauce, vinegar, and honey. Stir well and simmer for 1–2 minutes until slightly thickened.
Combine:
Return chicken to the pan, toss to coat evenly in the sauce.
Let it simmer for another 2–3 minutes until everything is well-glazed.
Serve:
Sprinkle with green onions and sesame seeds.
