Ingredients
For the crepes:

2 large eggs

1 cup fresh spinach, finely chopped or blended into batter
1 tbsp olive oil
Pinch of salt
For the filling:
1 cup fresh or frozen sweet peas (blanched if frozen)
2 cups baby spinach, lightly wilted or fresh
2 tbsp olive oil
Salt & pepper, to taste
For the whipped goat cheese:
150 g soft goat cheese
2 tbsp Greek yogurt or crème fraîche (makes it extra creamy)
1 tsp lemon zest
1 tsp honey (optional, balances tanginess)
Instructions
1. Make the crepes batter
In a blender, combine flour, eggs, milk, chopped spinach, olive oil, and salt.
Blend until smooth and slightly green. Rest for 10 minutes.
2. Cook the crepes
Heat a non-stick pan over medium heat and lightly oil.
Pour a thin layer of batter, swirling to coat the pan.
Cook 1–2 minutes until edges lift, then flip and cook another 30 seconds.
Stack on a plate and cover with a towel to keep warm.
3. Make the whipped goat cheese
In a bowl, beat goat cheese, yogurt, lemon zest, and honey (if using) until fluffy.
4. Prepare the filling
In a skillet, sauté peas and spinach with olive oil until just tender. Season with salt and pepper.
5. Assemble
Spread whipped goat cheese onto each crepe.
Add a spoonful of peas and spinach.
Fold into quarters or roll into cylinders.
6. Serve
Drizzle with a little olive oil and sprinkle with fresh herbs (mint, basil, or dill work beautifully).
