Ingredients

Toast

2 slices whole-grain or sourdough bread

1 tbsp olive oil

Vegan Halloumi

150 g firm tofu or store-bought vegan halloumi

1 tsp olive oil

¼ tsp smoked paprika

¼ tsp garlic powder

Pinch of salt

Avocado Spread

1 ripe avocado

1 tsp lemon juice

Salt & black pepper to taste

Garnish

Cherry tomatoes, halved

Fresh basil or parsley

Chili flakes

Instructions

1️⃣ Prepare Avocado

Mash avocado with lemon juice, salt, and pepper

Set aside

2️⃣ Cook Vegan Halloumi

Slice tofu/vegan halloumi into ½ cm thick slices

Heat olive oil in a pan

Cook 2–3 minutes per side until golden and slightly crispy

Season with smoked paprika and garlic powder

3️⃣ Toast Bread

Toast bread slices until crispy

Optionally brush lightly with olive oil

4️⃣ Assemble

Spread mashed avocado on toast

Layer halloumi slices on top

Add cherry tomatoes and herbs

Sprinkle chili flakes if desired

5️⃣ Serve

Serve immediately while halloumi is warm
