Ingredients

For the Roasted Vegetables

2 medium zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

2 tbsp olive oil

1 tsp dried oregano

1 tsp garlic powder (or 2 cloves fresh, minced)

½ tsp chili flakes

Salt and pepper, to taste

For Assembly

8 oz (225 g) burrata cheese (1–2 balls)

2 tbsp fresh basil leaves, torn

1 tbsp balsamic glaze

Crusty bread or pita, for serving

Instructions

1. Roast the Zucchini & Tomatoes

Preheat oven to 425°F (220°C).

On a baking sheet, toss zucchini and cherry tomatoes with olive oil, oregano, garlic powder, chili flakes (if using), salt, and pepper.

Spread in an even layer and roast for 15 minutes, flipping halfway, until zucchini is golden and tomatoes are slightly blistered.

2. Assemble in the Skillet

Transfer roasted vegetables into an oven-safe skillet (cast iron works best).

Place the burrata ball(s) in the center.

Return to the oven for 2–3 minutes, just until burrata is slightly warmed but not fully melted.

3. Garnish & Serve

Remove skillet from oven and sprinkle with torn basil leaves.

Drizzle with balsamic glaze, if desired.

Serve immediately with warm crusty bread or pita to scoop up the creamy cheese and vegetables.
