Ingredients

Honey Lime Chicken

2 chicken breasts, sliced or cubed

1½ tbsp olive oil

2 tbsp honey

Zest of 1 lime

2 tbsp lime juice

2 garlic cloves, minced

½ tsp paprika

¼ tsp black pepper

Salt to taste

Rice Layer

1 cup cooked white or brown rice

1 tbsp lime juice

Salt to taste

Avocado Layer

2 ripe avocados, diced

1 tbsp lime juice

Salt & black pepper

Garnish

Fresh cilantro or parsley

Chili flakes

Sesame seeds or toasted almonds

Instructions

1️⃣ Marinate Chicken

In a bowl, mix honey, lime zest, lime juice, garlic, olive oil, paprika, salt & pepper

Add chicken and toss well

Marinate 10–15 minutes (even 5 minutes works)

2️⃣ Cook Chicken

Heat a pan over medium heat

Cook chicken 4–5 minutes per side until golden and glazed

Let rest 2 minutes, then slice if needed

3️⃣ Prepare Rice

Mix warm rice with lime juice and a pinch of salt

4️⃣ Prepare Avocado

Toss diced avocado with lime juice, salt & pepper

5️⃣ Assemble the Stack

Use a ring mold or small bowl

Bottom layer: rice

Middle layer: avocado

Top layer: honey lime chicken

Gently lift mold

Garnish with herbs, chili flakes, or nuts
