📝 Ingredients
For the Zaatar Cauliflower
1 medium cauliflower, cut into florets
2–3 tbsp olive oil
1.5 tbsp zaatar
½ tsp garlic powder
½ tsp oregano
Salt & pepper
For the Caramelized Onions
1 large onion, thinly sliced
1 tbsp olive oil
Pinch of salt
½ tsp balsamic vinegar or 1 tsp sugar (optional, helps caramelize)
For the Base
1 cup hummus (store-bought or homemade)
1–2 tbsp extra virgin olive oil
Squeeze of lemon
Fresh parsley or mint for garnish
Optional: toasted pine nuts or almonds
👩🍳 Instructions
1. Roast the cauliflower
1. Preheat oven to 220°C (425°F).
2. Toss cauliflower with olive oil, zaatar, garlic powder, oregano, salt & pepper.
3. Spread on a tray.
4. Roast 20–25 minutes until golden and slightly charred.
2. Caramelize the onions
1. Heat olive oil in a pan on medium-low heat.
2. Add sliced onions + pinch of salt.
3. Cook 10–12 minutes, stirring occasionally.
4. Add balsamic/sugar if using. Cook until deep golden and soft.
3. Prepare the hummus base
Spread hummus on a plate or shallow bowl.
Drizzle with olive oil + a squeeze of lemon.
4. Assemble
Top the hummus with:
1. Zaatar roasted cauliflower
2. Caramelized onions
3. Fresh parsley or mint
4. Optional: toasted nuts + extra zaatar
Serve warm with pita, flatbread, or roasted veggies.
