Zucchini Veggie Patties
Ingredients

2 medium Zucchini (grated)

1 small onion, finely chopped

1 carrot, grated

2 eggs
-
½ cup breadcrumbs

¼ cup grated Parmesan cheese (optional)

2 cloves garlic, minced
-
½ teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon paprika
-
2 tablespoons chopped fresh parsley (optional)

2–3 tablespoons olive oil for frying
Instructions

Prepare the zucchini

Grate the zucchini and place it in a bowl.

Sprinkle a little salt and let it sit for 10 minutes.

Squeeze out as much water as possible using a clean cloth or paper towel.

Mix the ingredients

In a large bowl combine the squeezed zucchini, onion, carrot, eggs, breadcrumbs, Parmesan cheese, garlic, salt, pepper, paprika, and parsley.

Mix well until everything is combined.

Shape the patties

Take about 2 tablespoons of mixture and form small flat patties.

Cook the patties

Heat olive oil in a skillet over medium heat.

Fry the patties for 3–4 minutes per side until golden brown and crispy.

Drain and serve

Place cooked patties on paper towels to remove excess oil.

Tips

For a healthier version, bake at 200°C (400°F) for 20–25 minutes, flipping halfway.
