INGREDIENTS FOR KOREAN BEEF BOWL
- One tbsp Olive oil
- 1 lb Cauliflower (frozen or fresh riced in a food processor)
- Half tsp Sea salt
- 1/8 tsp Black pepper (optional)
BEEF:
- One tbsp Olive oil
- One lb Ground beef
- 1/2 tsp Sea salt
- 4 cloves Garlic (minced)
- 1/4 cup Coconut amino
- 1/4 cup Beef broth
- 2 tsp Sesame oil
- 1/4 tsp Ground ginger
- 1/4 tsp Crushed red pepper flakes
GARNISH: - 1/4 cup Green onions (sliced)
- One tsp Sesame seeds
- One small Cucumber (~8 ounces, sliced, optional)
Instructions:
- In a large wok, heat 1 tablespoon (15 mL) olive oil over medium-high heat. Include the cauliflower rice. If preferred, add more sea salt and black pepper for seasoning. Saute until well cooked, three to five minutes.
- After taking the cauliflower rice off the stove, cover it to stay warm.
- Combine the red pepper flakes, ground ginger, sesame oil, coconut aminos, and beef broth in a small bowl. Sauce should be put away.
- Reset the heat to medium-high. To the wok, add one more tablespoon (15 mL) of olive oil. Season with sea salt and add the ground beef. Cook until browned, stirring periodically and breaking up with a spatula, about 8 to 10 minutes.
- In the meat, create a well and add the minced garlic. Saute until fragrant, about 1 minute, then stir into the steak.
- Cover the beef with the sauce. After bringing to a simmer, lower the heat, and simmer the sauce for three to four minutes, or until it has thickened and decreased. Not much liquid will remain.
- Spoon the cauliflower rice onto individual dishes.Add ground beef on top. Add cucumber slices, sesame seeds, and sliced green onions as garnish.
AWESOME DIFFERENCE: Include a fried egg!
Add a fried egg to the dish to make it even more satisfying. A sunny side up egg is recommended in many Korean beef bowl recipes, but feel free to cook your egg any way you choose.
