Marinated Feta
Ingredients:
- – 2 blocks (7 oz/200 g each) of feta cheese
- – 1/2 cup (120 ml) extra virgin olive oil
- – 2 tbsp red wine vinegar
- – 2 tbsp very finely diced shallots (about 1 small shallot)
- – 1 tbsp very finely diced fresh parsley
- – 2 tsp honey
- – 1 heaped tsp dried oregano
- – 1 tsp chili flakes (reduce if you prefer less spice)
Directions:
1. In a small bowl, whisk together the olive oil, red wine vinegar, honey, parsley, shallots, oregano, and chili flakes until well combined.
2. Pat the feta dry with a paper towel, then cut it into small bite-sized cubes.
3. In a large shallow dish, spread a few spoonfuls of the marinade at the bottom. Place the feta cubes on top of the marinade.
4. Pour the remaining marinade over the feta, ensuring that all the cubes are evenly coated.
5. Cover the dish and marinate in the fridge for at least 2 hours, but if you can wait, let it sit for 4 hours or more. Occasionally baste or gently toss the feta to keep it well coated.
6. Before serving, bring the marinated feta close to room temperature to allow the flavors to meld and the marinade to loosen up.
