Ingredients:
2 eggplants
2 onions
8 tomatoes
1 clove of garlic
Fresh parsley
Greek yogurt
Olive oil
Salt & pepper
Instructions:
1. Preheat your oven to 200°C (400°F) .
2. Wash and slice the eggplants into rounds or lengthwise—your choice!
3. Place the eggplant slices on a baking tray lined with parchment paper. Drizzle with olive oil and sprinkle with salt & pepper .
4. Roast the eggplants in the oven for 20-25 minutes or until they’re tender & golden brown .
5. While they roast, prepare the tomato-onion sauce:
Finely chop onions , tomatoes and garlic .
Heat olive oil in a pan over medium heat. Add onions and sauté until translucent .
Add garlic and cook for another minute until fragrant .
Stir in the tomatoes, season with salt & pepper, and cook until they form a sauce. Finish with chopped parsley,
6. Once the eggplants are roasted, arrange them on a serving platter.
7. Pour the warm tomato-onion sauce over the roasted eggplants
8. Add a dollop of Greek yogurt on top for a creamy touch .
