Instructions
Prep zucchini
Shred zucchini using a box grater or food processor.
Place in a colander, sprinkle with salt, and let sit 10 minutes.
Squeeze out as much liquid as possible using a clean towel or cheesecloth.
Make filling
In a large bowl, whisk eggs, Greek yogurt, mozzarella, feta, ¼ cup Parmesan, onion, garlic, parsley, oregano, and black pepper.
