These salmon patties are a Mediterranean twist on a classic. Made with fresh herbs, lemon, and feta, they’re crispy on the outside, tender on the inside, and come together in under 30 minutes. Great for a quick dinner, lunch, or even meal prep!

Ingredients

1 can (14–15 oz) salmon, drained and flaked (or 2 cups cooked fresh salmon)

1 egg, lightly beaten

½ cup breadcrumbs (panko or whole wheat)

¼ cup feta cheese, crumbled

2 tbsp red onion, finely diced

2 tbsp fresh parsley, chopped

1 tbsp fresh dill

1 tbsp lemon juice

1 tsp lemon zest

½ tsp garlic powder (or 1 fresh garlic clove, minced)

½ tsp dried oregano

Salt & black pepper to taste

2 tbsp olive oil (for frying)

Instructions

Mix the patties: In a large bowl, combine salmon, egg, breadcrumbs, feta, onion, parsley, dill, lemon juice, zest, garlic powder, oregano, salt, and pepper. Mix until just combined.

Form patties: Shape into 6 equal patties (about ½ inch thick). If mixture is too wet, add more breadcrumbs; if too dry, add a splash of olive oil or another beaten egg.

Cook: Heat olive oil in a skillet over medium heat. Fry patties 4–5 minutes per side, until golden brown and crispy.

Serve: Enjoy warm with lemon wedges and a dipping sauce.
