Prep time: 10 minutes
Cook time: 12–15 minutes
Total time: 25 minutes
Ingredients
1 can (14–15 oz) salmon, drained and flaked (or 2 cups cooked fresh salmon)
1 egg, lightly beaten
½ cup breadcrumbs (panko or whole wheat)
¼ cup feta cheese, crumbled
2 tbsp red onion, finely diced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill
1 tbsp lemon juice
1 tsp lemon zest
½ tsp garlic powder (or 1 fresh garlic clove, minced)
½ tsp dried oregano
Salt & black pepper to taste
2 tbsp olive oil (for frying)
Instructions
Mix the patties: In a large bowl, combine salmon, egg, breadcrumbs, feta, onion, parsley, dill, lemon juice, zest, garlic powder, oregano, salt, and pepper. Mix until just combined.
Form patties: Shape into 6 equal patties (about ½ inch thick). If mixture is too wet, add more breadcrumbs; if too dry, add a splash of olive oil or another beaten egg.
Cook: Heat olive oil in a skillet over medium heat. Fry patties 4–5 minutes per side, until golden brown and crispy.
Serve: Enjoy warm with lemon wedges and a dipping sauce.

Notes & Tips
For extra crispy patties, chill shaped patties in the fridge for 20 minutes before cooking.
Swap feta with Parmesan if you want a milder cheese.
These can also be baked at 400°F (200°C) for 15–18 minutes, flipping halfway.
Frequently Asked Questions
Q: Can I use fresh salmon instead of canned?
Yes—just flake cooked salmon (baked or pan-seared) and use the same amount.
Q: Can I make them ahead?
Yes—form patties and refrigerate up to 24 hours before cooking. Cooked patties also freeze well (up to 2 months).
Q: How do I keep them from falling apart?
Make sure the mixture isn’t too wet—breadcrumbs and egg act as binders.
