Ingredients
For the Salad:
3 medium zucchinis
½ cup shaved parmesan cheese
2 tbsp fresh parsley, chopped
1 tbsp fresh basil leaves, torn
For Spicy Almonds:
½ cup whole almonds, roughly chopped
1 tbsp olive oil
½ tsp chili flakes (adjust to taste)
½ tsp smoked paprika
½ tsp salt
For Dressing:
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 tsp honey (optional)
½ tsp Dijon mustard
Salt & black pepper, to taste
Instructions
1. Prepare the Zucchini:
Wash and trim the ends.
Using a vegetable peeler or mandoline, shave zucchini into thin ribbons. Place in a large bowl.
2. Toast Spicy Almonds:
Heat olive oil in a small pan over medium heat.
Add chopped almonds, chili flakes, smoked paprika, and salt.
Toast for 3–4 minutes until fragrant and golden. Set aside to cool.
3. Make the Dressing:
Whisk olive oil, lemon juice, honey, Dijon mustard, salt, and pepper in a small bowl until emulsified.
4. Assemble the Salad:
Toss zucchini ribbons gently with dressing.
Add parsley, basil, and half of the spicy almonds.
Top with shaved parmesan and the rest of the almonds.
5. Serve Immediately:
Best enjoyed fresh and slightly chilled.
