Cook 2–3 minutes until just wilted. Season with salt, pepper, and oregano. Remove from heat.

3. Assemble Quesadillas:

Lay one tortilla flat.

Spread a portion of spinach-onion mixture on half of it.

Sprinkle feta and mozzarella (if using) on top.

Fold tortilla in half to enclose filling. Repeat with remaining tortillas.

4. Cook the Quesadillas:

Heat a skillet with a little olive oil.

Cook quesadillas 2–3 minutes per side until golden brown and crisp.

Press gently with a spatula so the cheese melts evenly.

5. Serve:

Slice into wedges.
