For the salad:

2 medium sweet potatoes, peeled & cubed (about 500 g / 1 lb)

2 tbsp olive oil

½ tsp salt

½ tsp black pepper

4 cups mixed greens (arugula, spinach, or spring mix)

½ cup dried cranberries

½ cup crumbled feta cheese

¼ cup toasted pecans or walnuts

2 tbsp pumpkin seeds

For the maple dressing:

3 tbsp extra virgin olive oil

1 tbsp apple cider vinegar

1 tbsp pure maple syrup

1 tsp Dijon mustard

Salt & black pepper, to taste

Instructions

Roast the sweet potatoes

Preheat oven to 200°C (400°F).

Toss sweet potato cubes with olive oil, salt, and pepper.

Spread on a baking sheet and roast 20–25 minutes, flipping halfway, until tender and caramelized.

Make the dressing

In a small jar, whisk (or shake) olive oil, apple cider vinegar, maple syrup, Dijon, salt, and pepper until emulsified.

Assemble the salad

On a serving platter or large bowl, layer greens.

Add roasted sweet potatoes, cranberries, feta, nuts, and seeds.

Drizzle with dressing just before serving. Toss lightly.
