Crispy Hot Honey Feta Chicken

Ingredients

For the Chicken

4 boneless skinless chicken breasts (or thighs)

1 cup panko breadcrumbs

½ cup grated Parmesan

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp dried oregano

Salt & pepper to taste

2 eggs, beaten

½ cup flour

For the Feta Crumble

½ cup crumbled feta

1 tbsp olive oil

½ tsp chili flakes

For the Hot Honey Drizzle

3 tbsp honey

1 tsp chili flakes (more for extra heat)

½ tsp apple cider vinegar

Pinch of sal

Optional Serving

Cooked rice or couscous

Fresh parsley

Lemon wedges

Directions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Mix panko, Parmesan, paprika, garlic powder, onion powder, oregano, salt, and pepper in a bowl.

Dredge chicken in flour, dip into beaten eggs, then coat in the panko mixture.

Place chicken on the baking sheet and spray lightly with olive oil.

Bake 20–25 minutes, flipping halfway, until golden and crispy.

In a small bowl, mix feta, olive oil, and chili flakes. Spoon over the chicken in the last 5 minutes of baking so it warms slightly.

Heat honey, chili flakes, vinegar, and salt in a small pan for 1–2 minutes until warm and runny.

Drizzle the hot honey over the crispy feta chicken.

Serve with rice or couscous, fresh parsley, and lemon wedges.
