Ingredients

For the Sweet Potatoes

2 medium sweet potatoes

1 tsp olive oil

Pinch of salt

For the Spiced Apple Filling

1 large apple, diced (Honeycrisp, Gala, or Fuji)

1 tbsp butter or olive oil

1–2 tbsp maple syrup or honey

½ tsp cinnamon

⅛ tsp nutmeg

⅛ tsp vanilla extract

Pinch of salt

Toppings 

Crushed walnuts or pecans

A dollop of Greek yogurt

Extra cinnamon

A drizzle of maple syrup

Dried cranberries or raisins

Instructions

1. Roast the Sweet Potatoes

Preheat oven to 200°C (400°F).

Wash and dry sweet potatoes.

Pierce each with a fork 3–4 times.

Rub lightly with olive oil and salt.

Bake 40–45 minutes, until soft and tender.

2. Prepare the Apple Spiced Filling

Heat butter/olive oil in a small pan over medium heat.

Add diced apples and sauté 3–4 minutes.

Stir in maple syrup/honey, cinnamon, nutmeg, and salt.

Cook 3–5 more minutes until apples soften and become glossy.

Add vanilla at the end and mix well.

3. Assemble

Slice roasted sweet potatoes lengthwise.

Fluff the inside gently with a fork.

Spoon warm cinnamon apples inside.

Add toppings like nuts, yogurt, or a drizzle of honey.

Notes & Tips

Make it breakfast-style by adding Greek yogurt + granola.

For a savory twist: skip maple syrup and add feta + walnuts.

Great for meal prep: roast sweet potatoes ahead and store 3–4 days.
