Chicken

2 chicken breasts, grilled or pan-seared, sliced

1 tbsp olive oil

Salt & black pepper, to taste

½ tsp dried oregano

Salad Base

2 cups mixed greens (romaine, arugula, spinach)

1 ripe avocado, diced

½ cup cherry tomatoes, halved

½ cucumber, sliced

¼ small red onion, thinly sliced

Mediterranean Add-ins

¼ cup olives (black or green)

¼ cup feta cheese, crumbled

Lemon Dressing

1½ tbsp extra-virgin olive oil

Juice of ½ lemon

½ tsp Dijon mustard

Salt & black pepper, to taste

Instructions

1️⃣ Cook the Chicken

Season chicken with olive oil, oregano, salt, and pepper.

Grill or pan-sear over medium heat 5–6 minutes per side until cooked through. Rest, then slice.

2️⃣ Make the Dressing

Whisk olive oil, lemon juice, Dijon (if using), salt, and pepper until smooth.

3️⃣ Assemble the Salad

In a large bowl, combine greens, avocado, tomatoes, cucumber, onion, olives, and feta.

Top with sliced chicken.

4️⃣ Dress & Serve

Drizzle dressing over salad and toss gently.

Serve immediately.
