 Ingredients

3 medium zucchini

2 large tomatoes (thinly sliced)

1½ cups mozzarella cheese (grated)

2 tbsp olive oil

1 tsp dried oregano or Italian herbs

½ tsp garlic powder (or 1 small garlic clove, minced)

Salt to taste

Black pepper to taste

2 tbsp grated parmesan (optional, for topping)

 Instructions

1. Preheat oven

to 180°C (350°F). Line a baking tray with parchment paper.

2. Prepare zucchini:

Cut off the ends.

Make deep slices along the zucchini without cuttings all the way through (Hasselback style).
