🧺 Ingredients

2 medium zucchini

1 medium tomato (chopped)

¼ cup mozzarella or feta cheese (crumbled)

1 tbsp olive oil

Salt to taste

Black pepper to taste

1. Prep zucchini:

Cut zucchini lengthwise.

Scoop out a little center to make boats.

2. Heat pan:
