Whole potatoes air-fried until perfectly crisp, then scooped and mixed with a creamy, savory filling and baked again until golden. Ideal for lunch, dinner, or a hearty snack.

Ingredients

Potatoes

4 medium potatoes (Russet or Maris Piper)

1 tbsp olive oil

Salt

Classic Stuffing 

½ cup Greek yogurt or sour cream

¼ cup grated cheese (cheddar, mozzarella, or mix)

1 tbsp olive oil

Black pepper

Optional Add-ins 

Chopped spring onions or chives

Sauteed mushrooms or spinach

Sweetcorn

Cooked chicken, tuna, or chickpeas

Paprika or garlic powder

Instructions

1️⃣ Air Fry Potatoes

Wash and dry potatoes

Prick with fork, rub with olive oil & salt

Air fry at 200°C (390°F) for 35–40 minutes, turning once

Potatoes should be crisp outside and soft inside

2️⃣ Prepare Filling

Slice tops off potatoes

Scoop out flesh carefully into a bowl

Mash with yogurt, cheese, butter, pepper & add-ins

3️⃣ Stuff & Re-Bake

Spoon filling back into potato skins

Air fry again at 190°C for 6–8 minutes until golden

4️⃣ Serve

Garnish with herbs or extra cheese

Serve hot
