Ingredients
For the Fries:
2 large sweet potatoes, peeled and cut into thin fries (¼-inch thick)
2 tbsp olive oil
1 tbsp cornstarch (for extra crispiness)
1 tsp garlic powder
1 tsp smoked paprika (or sweet paprika)
½ tsp salt
½ tsp black pepper
For the Lemon Yogurt Dip:
1 cup Greek yogurt (plain, full-fat or low-fat)
Zest of 1 lemon
1 tbsp fresh lemon juice
1 small garlic clove, grated or minced
1 tbsp olive oil
Salt & black pepper, to taste
1 tbsp fresh dill or parsley, chopped
Instructions
1. Prep the Fries
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut sweet potatoes into thin fries, then soak them in cold water for 20 minutes (optional, helps remove starch for crispier fries).
Drain, pat completely dry with a towel.
2. Season & Coat
In a large bowl, toss fries with olive oil.
Sprinkle with cornstarch, garlic powder, paprika, salt, and pepper. Toss until evenly coated.
3. Bake
Arrange fries in a single layer (don’t overcrowd) on the baking sheet.
Bake for 15 minutes, flip fries, then bake another 10–15 minutes, until crisp and golden.
4. Make the Lemon Yogurt Dip
In a bowl, combine Greek yogurt, lemon zest, lemon juice, garlic, olive oil, salt, pepper, and herbs if using. Mix well.
Chill in the fridge until ready to serve.
5. Serve
Transfer fries to a platter, sprinkle with extra sea salt if desired.
Serve hot with the cool, tangy lemon yogurt dip.
Notes & Tips
Extra Crisp: Bake on a metal cooling rack placed over the baking sheet for maximum airflow.
Spicy Twist: Add a pinch of cayenne pepper or chili flakes.
Shortcut: Skip soaking if you’re short on time, though soaking improves texture.
