Broccoli Snap Peas & Crispy Tempeh Salad
This salad is a crisp, satisfying, Mediterranean–Asian fusion bowl featuring crunchy broccoli and snap peas with golden crispy tempeh. It’s tossed in a refreshing sesame-lemon dressing and topped with nuts or seeds for extra crunch. Perfect for a nourishing lunch or light dinner!

Ingredients
For the Salad
200 g (7 oz) tempeh, sliced into thin strips or cubes
1 tbsp olive oil or avocado oil
1 ½ cups broccoli floret
1 cup snap peas, trimmed
1 cup mixed greens (spinach, arugula, or lettuce)
¼ cup cucumber, sliced
1 small carrot, julienned or shredded
1 tbsp toasted almonds, cashews, or sesame seeds
Salt and black pepper, to taste
For the Lemon Sesame Dressing
2 tbsp olive oil or toasted sesame oil
1 tbsp lemon juice
1 tsp honey or maple syrup
1 tsp soy sauce or tamari
½ tsp Dijon mustard (optional)
½ tsp grated ginger (optional, for freshness)
Salt and pepper, to taste
Instructions
1. Cook the Tempeh
1. Heat olive oil in a nonstick skillet over medium heat.
2. Add tempeh pieces and cook for 3–4 minutes per side until golden and crispy
3. Season lightly with salt and pepper.
4. Remove and let cool slightly.
2. Blanch the Veggies
1. Bring a small pot of water to a boil.
2. Add broccoli and snap peas, cook 2 minutes just until bright green.
3. Immediately transfer to ice water to keep them crisp. Drain well.
3. Make the Dressing
1. In a small bowl, whisk together oil, lemon juice, honey, soy sauce, mustard, ginger, salt, and pepper until smooth.
4. Assemble the Salad
1. In a large bowl, add greens, cucumber, carrot, broccoli, and snap peas.
2. Top with crispy tempeh and sprinkle with nuts or sesame seeds.
3. Drizzle with the lemon sesame dressing. Toss gently to combine.
Notes & Tips
Add avocado or edamame for more creaminess or protein.
For a Mediterranean twist, swap sesame oil for olive oil and top with crumbled feta.
Works great as a meal prep salad — keep dressing separate until ready to serve.
