Ingredients

Salad:

4 ears fresh corn, husked (or 3 cups frozen corn, thawed)

1 tbsp olive oil (for grilling/charred pan)

½ cup feta cheese, crumbled

1 cup cherry tomatoes, halved

½ small red onion, thinly sliced

½ cup fresh basil leaves, chopped

¼ cup fresh parsley, chopped

1 avocado, diced

Lemon Basil Vinaigrette:

3 tbsp extra virgin olive oil

Juice and zest of 1 lemon

1 tsp Dijon mustard

1 small garlic clove, minced

2 tbsp fresh basil, finely chopped

Salt & black pepper, to taste

Instructions

Char the Corn

Brush corn with olive oil.

Grill over medium-high heat (or use a cast-iron skillet) for 8–10 minutes, turning occasionally, until slightly charred.

Let cool, then cut kernels off the cob.

Make the Dressing

Whisk together olive oil, lemon juice & zest, Dijon mustard, garlic, basil, salt, and pepper until emulsified.

Assemble the Salad

In a large bowl, combine charred corn, cherry tomatoes, onion, basil, parsley, and avocado (if using).

Drizzle with lemon basil vinaigrette and toss gently.

Finish with Feta

Sprinkle feta on top and serve immediately.
