Ingredients

For the Casserole Base:

1 1/2 lbs (700 g) boneless, skinless chicken breasts or thighs, cut into chunks

4 medium potatoes, peeled & diced into cubes

2 cups broccoli florets

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

Salt & black pepper, to taste

For the Cheese Sauce:

2 tbsp butter

2 tbsp all-purpose flour

2 cups milk

1/2 cup chicken broth

1 tsp Dijon mustard

1/2 tsp dried thyme or oregano

1 1/2 cups shredded cheddar cheese

Salt & pepper to taste

Topping:

1/2 cup shredded cheese

2 tbsp breadcrumbs

Instructions

Prep potatoes:

Parboil potato cubes for 8–10 minutes until just tender, then drain.

Cook chicken:

Season chicken with garlic powder, paprika, salt, and pepper.

Heat 1 tbsp olive oil in a skillet and sear chicken chunks until lightly golden (they don’t need to be fully cooked through).

Prepare cheese sauce:

In a saucepan, melt butter, whisk in flour, and cook 1 minute.

Slowly whisk in warm milk and chicken broth until smooth.

Add mustard, herbs, salt, and pepper.

Stir in cheese until melted and creamy.

Assemble casserole:

Preheat oven to 375°F (190°C).

In a greased baking dish, layer potatoes, chicken, broccoli, and peppers.

Pour cheese sauce evenly over everything.

Top with extra cheese (and breadcrumbs if using).

Bake:

Bake uncovered for 25–30 minutes, until bubbly and golden on top.

Rest 5 minutes before serving.

Notes & Tips

For a lighter version, swap half the potatoes with cauliflower.

Add spinach or zucchini for extra veggies.

Can be made ahead: assemble, cover, and refrigerate up to 24 hours, then bake.
