Classic Cobb Salad

Ingredients

For the salad:

6 cups chopped romaine lettuce (or a mix of romaine and iceberg)

2 cups cooked chicken breast, diced or sliced (grilled or roasted)

4 slices bacon, cooked and crumbled

2 hard-boiled eggs, peeled and chopped

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 cup blue cheese crumbles

1/4 cup thinly sliced red onion (optional)

For the dressing (Classic Red Wine Vinaigrette):

1/4 cup red wine vinegar

1 teaspoon Dijon mustard

1 clove garlic, mince

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup olive oil

Instructions

Make the dressing:

In a small bowl or jar, whisk together the vinegar, mustard, garlic, salt, and pepper. Slowly drizzle in the olive oil while whisking to emulsify. Set aside.

Prepare the salad base:

Lay down a bed of chopped lettuce on a large platter or in a salad bowl.

Arrange toppings:

Neatly arrange the chicken, bacon, eggs, avocado, tomatoes, blue cheese, and red onion in rows on top of the lettuce (or mix it all together if you prefer).

Dress and serve:

Drizzle the vinaigrette over the salad just before serving, or serve it on the side.

Tips

Swap blue cheese with feta or goat cheese if preferred.

Use rotisserie chicken for a quick shortcut.

You can add cucumbers or corn for extra crunch and sweetness.
