Colorful Clean-Eating Protein Plate

A bright, balanced, feel-good meal featuring tender chicken strips, boiled carrots, soft potatoes, earthy beets, and perfectly cooked eggs. Simple ingredients, clean flavors, and tons of nutrients — perfect for lunch, meal prep, or a light dinner.

Protein & Veggies

1 chicken breast, sliced into strips

1 tsp olive oil

1 large carrot, sliced

1 medium potato, sliced

1 medium beet, peeled and cut into strips

2 hard-boiled eggs, quartered

Seasoning

Salt to taste

Black pepper (optional)

 

¼ tsp garlic powder (optional)

 

 

Cook the Carrots & Potatoes

 

Boil carrot slices for 8–10 minutes until tender.

 

Boil potato slices for 10–12 minutes until soft.

 

Cook the Beets

 

Boil beet strips for 15–20 minutes until tender, then drain.

 

Cook the Chicken

 

Heat olive oil in a pan over medium heat.

 

Add chicken strips, season with salt (and pepper/garlic powder if you like).

 

Cook for 4–5 minutes per side until golden and fully cooked.

 

Prepare the Eggs

 

Boil eggs for 10 minutes, cool in cold water, peel, and cut into quarters.

 

Assemble the Plate

 

Arrange chicken, carrot slices, potato slices, beet strips, and egg quarters neatly on a plate.
