For the Pasta:

250 g (8 oz) fettuccine

2 tbsp olive oil

3 garlic cloves, minced

1 tbsp flour

1 cup milk

½ cup cream

½ cup chicken broth

½ cup grated Parmesan cheese

¼ cup mozzarella cheese

Salt and pepper, to taste

½ tsp Italian seasoning or oregano

Optional: pinch of chili flakes

For Baking:

½ cup shredded mozzarella (or mixed mozzarella-Parmesan) for topping

Fresh parsley, chopped

Instructions

1. Cook the Pasta:

Bring salted water to a boil and cook fettuccine until al dente.

Drain and set aside (reserve about ¼ cup of pasta water).

2. Cook the Chicken:

Season chicken with salt, pepper, garlic powder, and paprika.

Heat olive oil in a skillet over medium heat.

Add chicken and cook for 5–6 minutes, until golden and cooked through.

Transfer to a plate and set aside.

3. Make the Creamy Sauce:

In the same pan, melt butter. Add garlic and saute for 30 seconds.

Stir in flour and whisk for 1 minute to form a roux.

Slowly add milk, cream, and broth, whisking continuously until smooth.

Add Parmesan, mozzarella (if using), Italian seasoning, salt, and pepper.

Simmer 2–3 minutes until thick and creamy.

4. Assemble the Bake:

Preheat oven to 375°F (190°C).

In a large mixing bowl, combine cooked pasta, chicken, and creamy sauce. Add a splash of pasta water if it feels too thick.

Transfer to a greased baking dish.

Top with shredded mozzarella (and extra Parmesan if desired).

5. Bake:
