Salt & black pepper, to taste
1 tbsp chopped parsley or chives
Toast
2 slices whole-grain or sourdough bread, toasted
½ ripe avocado, mashed
¼–⅓ cup shredded cheddar cheese
Instructions
1️⃣ Make the Egg Salad
In a bowl, combine chopped eggs, yogurt/mayo, mustard, salt, pepper, and herbs. Mix until creamy.
2️⃣ Prepare the Toast
Toast bread until golden.
