Ingredients

1 ½ cups feta cheese, crumbled (block feta works best)

½ cup green olives, pitted

3 tbsp Greek yogurt or thick plain yogurt

2 tbsp olive oil

1 small garlic clove (or ½ if you prefer mild)

1 tbsp lemon juice

1–2 tbsp brine from the olive jar

Seasonings:

½ tsp dried oregano

¼ tsp black pepper

Optional: a pinch of paprika

Chopped green olives

A drizzle of olive oil

Instructions

Step 1: Add Ingredients to Processor

In a food processor or blender add:

Feta

Green olives

Yogurt

Olive oil

Garlic

Lemon juice

Olive brine

Oregano & black pepper

Step 2: Blend Until Creamy

Blend for about 1 minute until smooth and spreadable.
If too thick → add 1–2 tsp olive oil or yogurt.
If too salty → add a bit more yogurt.

Step 3: Chill

Transfer to a bowl, smooth the top, drizzle olive oil, and garnish with chopped olives or herbs.
Chill 20 minutes for the flavors to develop.

Add roasted garlic for a sweeter, deeper taste.
