Crispy Cauliflower Bites with Brie & Cranberry Sauce
Ingredients
For the Crispy Cauliflower
1 medium cauliflower, cut into bite-sized florets
1 cup panko breadcrumbs
½ cup grated Parmesan
½ cup all-purpose flour
2 eggs, beaten
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
Olive oil spray or 2 tbsp olive oil
For the Brie & Cranberry Topping
6 oz brie cheese, cut into small cubes
½ cup cranberry sauce (homemade or store-bought)
1 tbsp honey (optional for shine + sweetness)
Fresh thyme or rosemary for garnish
Directions
Make the Crispy Cauliflower
Preheat oven to 220°C (425°F). Line a baking sheet with parchment.
Place flour in one bowl, beaten eggs in another, and mix panko, Parmesan, garlic powder, smoked paprika, salt, and pepper in a third.
Dip each cauliflower floret into flour, then egg, then fully coat in the panko mixture.
Arrange on the baking sheet and spray lightly with olive oil.
Bake 20–25 minutes, flipping halfway, until golden and crispy.
Add the Brie
Remove the tray from the oven and top each hot cauliflower bite with a cube of brie.
Return to the oven for 2–3 minutes to gently melt the brie.
Cranberry Finish
Warm cranberry sauce in a small saucepan and stir in honey if desired.
Spoon a small amount over each melted-brie cauliflower bite.
Garnish with thyme or rosemary and serve immediately.
