Crispy Okra Patties

Crispy okra patties are made from finely chopped fresh okra mixed with onions, herbs, and a light batter, then pan-fried until golden brown. They combine the earthy flavor of okra with aromatic herbs, giving you a light yet satisfying dish.

Ingredients

Fresh okra – 250 g (about 2 cups, finely chopped)

Red onion – 1 small, finely chopped

Fresh parsley – 2 tbsp, finely chopped

Fresh dill (optional) – 1 tbsp, finely chopped

Garlic – 1 clove, minced

All-purpose flour – ½ cup

Cornmeal – ¼ cup

Egg – 1 large

Baking powder – ½ tsp

Salt – ½ tsp

Black pepper – ¼ tsp

Ground cumin or coriander – ¼ tsp

Cold water – 2–4 tbsp

Olive oil or light cooking oil – for shallow frying

Instructions

Prep okra

Wash okra, dry thoroughly, and trim off stems.

Slice thinly and then chop into small pieces (this helps avoid gumminess).

Make the batter

In a large bowl, combine okra, onion, parsley, dill, and garlic.

Add flour, cornmeal, baking powder, salt, pepper, and optional spices.

Stir in the beaten egg and mix.

Gradually add cold water, 1 tbsp at a time, until the mixture holds together but isn’t runny.

Shape patties

Take about 2 tbsp of mixture and press gently into small round patties (about 2 inches wide).

Place them on a plate lined with parchment paper.

Fry

Heat 3–4 tbsp of oil in a nonstick skillet over medium heat.

Fry patties for 3–4 minutes on each side until golden and crispy.

Transfer to paper towels to drain excess oil.

Serve

Serve hot with lemon wedges, yogurt-dill sauce, or tzatziki.

Notes & Tips

For extra crispiness: Use more cornmeal than flour.

To reduce okra slime: Make sure okra is completely dry before chopping, and avoid overmixing.

Baking option: Place patties on a greased baking tray, brush with oil, and bake at 200°C (400°F) for ~18–20 minutes, flipping halfway.

Serving Suggestions

As a mezze plate with hummus, baba ghanoush, and pita.

With a fresh tomato-cucumber salad.

As a vegetarian burger patty inside a bun with tahini sauce.
