Easy Green Shakshuka with Feta

2 tbsp olive oil
1 small onion or 2 shallots, finely sliced
3 cloves garlic, minced
1 tsp ground cumin
½ tsp ground coriander
Salt & black pepper, to taste
1 zucchini, grated or finely chopped
2 cups baby spinach (or Swiss chard / kale)
½ cup fresh herbs, chopped (parsley, cilantro, dill, or mint – mix if you like)
¼ cup green onions, sliced
½ cup vegetable broth or water
4–6 eggs
⅓–½ cup feta cheese, crumbled
Optional: squeeze of lemon juice

1. Start the base
Heat olive oil in a wide skillet over medium heat.
Add onion and cook 5–6 minutes until soft.
2. Build flavor
Add garlic, cumin, coriander, salt, and pepper. Stir for 30 seconds until fragrant.
3. Add the greens
Stir in zucchini and cook 2–3 minutes until softened.
Add spinach and herbs; cook until just wilted.
4. Simmer gently
Pour in broth. Simmer 5 minutes until saucy but not watery.
Taste and adjust seasoning.
5. Add eggs
Make small wells and crack eggs into the pan.
Cover and cook 6–8 minutes, until whites are set and yolks are still soft.
6. Finish
Sprinkle feta on top, add lemon juice if using, and a drizzle of olive oil.
