Ingredients:

For the Quinoa:

– 1 cup quinoa, rinsed and drained
– 2 cups water or vegetable broth
– Salt to taste

For the Avocado Salsa:

– 3 ripe avocados, diced
– 1/2 red onion, diced
– 1 jalapeño pepper, seeded and finely chopped
– 1 lime, juiced
– 2 cloves garlic, minced
– Salt and pepper to taste

For the Assembly:

– Chopped fresh herbs (parsley, rosemary)
– Lemon wedges

Instructions:

Step 1: Prepare Quinoa

1. Rinse quinoa in a fine mesh strainer.
2. In a medium saucepan, bring quinoa and water/broth to a boil.
3. Reduce heat, cover, and simmer for 15-20 minutes or until tender.
4. Season with salt to taste.

Step 2: Prepare Salmon
