Ingredients

For the Salad

1 small cauliflower, cut into bite-size florets

1 ½ tbsp olive oil

Salt and pepper, to taste

2 cups mixed greens (spinach, arugula, or lettuce)

½ cup cucumber, sliced or diced

½ avocado, sliced

¼ cup green peas or edamame (optional, for extra protein)

2 tbsp toasted almonds or pistachios (for crunch)

For the Green Sauce

½ cup Greek yogurt (or tahini for dairy-free)

1 cup fresh herbs (mix of parsley, cilantro, and mint)

1 small garlic clove

2 tbsp lemon juice

2 tbsp olive oil

1–2 tbsp water (to thin if needed)

Salt and black pepper, to taste

Instructions

1. Roast the Cauliflower

Preheat oven to 220°C (425°F).

Toss cauliflower florets with olive oil, salt, and pepper.

Spread on a baking sheet and roast 20–25 minutes, flipping halfway until golden and crisp on the edges.

2. Make the Green Sauce

In a blender or food processor, combine yogurt, herbs, garlic, lemon juice, olive oil, salt, and pepper.

Blend until smooth and creamy. Add water if needed to reach dressing consistency.

3. Assemble the Salad

In a large bowl or plate, layer greens, cucumber, avocado, and roasted cauliflower.

Add green peas or edamame if using.

Drizzle generously with the green sauce.

Sprinkle with toasted nuts for crunch.

4. Serve Immediately

Serve warm or at room temperature. Perfect on its own or paired with grilled chicken or salmon.
