Salad:
2 pita breads, cut into bite-sized pieces
1 tbsp olive oil (for toasting)
1 large romaine heart, chopped
1 cucumber, diced
2 medium tomatoes, chopped (or 1 cup cherry tomatoes, halved)
½ red onion, thinly sliced
½ red bell pepper, diced
½ cup radishes, thinly sliced
½ cup feta cheese, crumbled
½ cup fresh parsley, chopped
¼ cup fresh mint leaves, chopped
Dressing:
3 tbsp extra virgin olive oil
2 tbsp lemon juice
1 tsp pomegranate molasses
1 garlic clove, minced
1 tsp ground sumac
Salt & black pepper, to taste
Instructions
Make the Pita Chips
Preheat oven to 375°F (190°C).
Toss pita pieces with olive oil and a pinch of salt.
Bake for 8–10 minutes, flipping halfway, until golden and crisp. Set aside.
Make the Dressing
Whisk together olive oil, lemon juice, pomegranate molasses (if using), garlic, sumac, salt, and pepper until emulsified.
Assemble the Salad
In a large bowl, combine romaine, cucumber, tomatoes, onion, bell pepper, radishes, parsley, and mint.
Toss with dressing until well coated.
Finish & Serve
Just before serving, add the pita chips and crumbled feta.
Toss lightly and enjoy immediately.
