Ingredients

For the Chicken:

1 lb (450 g) boneless, skinless chicken breasts or thighs

3 tbsp extra-virgin olive oil

3 cloves garlic, minced

1 lemon (zest + juice)

1 tsp dried oregano (or 1 tbsp fresh)

1 tsp fresh thyme leaves (or ½ tsp dried)

½ tsp salt

¼ tsp freshly ground black pepper

For the Yogurt Sauce:

½ cup plain Greek yogurt

1 tbsp lemon juice

1 small garlic clove, minced or grated

1 tbsp chopped fresh parsley or dill

Pinch of salt

For Serving:

4 flatbreads or pitas (warm)

Sliced cucumber

Sliced tomatoes or cherry tomato halves

Thinly sliced red onion Fresh parsley, mint, or arugula for garnish

Instructions

1. Marinate the Chicken

Slice chicken into thin strips or small chunks.

In a bowl, combine olive oil, garlic, lemon zest and juice, oregano, thyme, salt, and pepper.

Add chicken, toss well, and marinate for at least 30 minutes (up to 2 hours) in the fridge.

2. Make the Yogurt Sauce

Mix yogurt, lemon juice, garlic, parsley (or dill), and salt in a small bowl.

Chill until ready to serve.

3. Cook the Chicken

Heat a skillet or grill pan over medium-high heat.

Cook chicken for 4–6 minutes, turning occasionally, until golden and cooked through.

4. Assemble the Flatbreads

Warm the flatbreads or pitas.

Spread a layer of yogurt sauce, top with chicken, cucumber, tomatoes, and onion.

Sprinkle with fresh herbs.

5. Serve Immediately

Drizzle with a little extra olive oil or a squeeze of lemon if desired.

 Notes & Tips

For a smoky touch, grill the chicken instead of pan-searing.

You can swap parsley with mint for a fresh twist.

Flatbreads can be homemade, store-bought, or replaced with whole-wheat pita for more fiber.

If you prefer a vegetarian version, replace chicken with grilled halloumi or chickpeas.
