Ingredients:
For the meatballs:
1 lb ground chicken
1/4 cup breadcrumbs
1/4 cup fresh parsley, chopped
1 clove garlic, minced
1 tsp dried oregano
1/2 tsp cumin
Salt and pepper to taste
1 egg
2 tbsp olive oil (for cooking)
For the bowl:
1 cup cooked rice
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/4 cup Kalamata olives
1/2 cup tzatziki sauce
Fresh dill for garnish (optional)
Instructions:
1. Prepare the meatballs:
In a bowl, mix ground chicken, breadcrumbs, parsley, garlic, oregano, cumin, salt, pepper, and egg until well combined. Form small meatballs. Heat olive oil in a skillet and cook the meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.
2. Assemble the bowl:
Divide cooked rice into bowls. Arrange the cooked meatballs, cherry tomatoes, cucumber slices, and Kalamata olives on top. Add a generous scoop of tzatziki sauce and garnish with fresh dill if desired.
