For the Tzatziki Sauce:
1 cup Greek yogurt
½ cucumber, grated and excess water squeezed out
1 tbsp olive oil
2 tbsp lemon juice
1 clove garlic, finely grated or minced
1 tbsp fresh dill or mint, chopped
Salt & pepper, to taste
For the Wraps:
4 Greek pitas or flatbreads
1 cup cucumber, diced
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
½ cup crumbled feta cheese
Fresh parsley or dill for garnish
Instructions
Marinate the Chicken
In a bowl, combine olive oil, lemon juice & zest, garlic, oregano, paprika, cumin, salt, and pepper.
Coat chicken and marinate at least 30 minutes (up to overnight for max flavor).
Cook the Chicken
Grill or pan-sear over medium-high heat until golden brown and fully cooked (165°F / 74°C).
Rest 5 minutes, then slice into strips.
Make Tzatziki Sauce
Mix Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper.
