Healthy Chicken Mango Salad
This recipe for easy and healthful chicken salad is full of vegetables, avocado, mango, and juicy, succulent chicken. followed by a homemade poppyseed dressing toss.
Ingredients:
Regarding mango-avocado-chicken salad:
- One-pound chicken breasts, two medium
- To taste, or half a teaspoon of kosher salt
- 1/4 tsp black pepper, or according your taste
- ¼ tablespoon olive oil
- 3–4 cups of raw rocket
- About 2/3 cup of grape tomatoes
- Two cucumbers from the garden
- One mango
- One avocado
- 1/2 petite aubergine
For dressing made with poppy seeds:
- 1/2 tablespoon maple syrup
- Two tablespoons apple cider vinegar
- 3 tbsp. olive oil
- 1/2 tsp. kosher salt or to taste
- 1/4 tsp. ground dry mustard
- 1/4 tsp. onion powder
- 1 tsp. poppy seeds
Instructions:
- In a dish, combine all the ingredients for the salad dressing; chill until needed.
- Add salt and pepper to the chicken breast to season it. Use an outside grill to cook chicken until its internal temperature reaches 165 degrees Fahrenheit.
- Heat the oil in a pan over medium-high heat if cooking the chicken inside. After placing the chicken breast in the skillet, fry it until it is pleasantly golden brown on both sides. around three minutes for each side.
- After it’s finished, take it off the fire and let it rest for ten minutes before slicing it into cubes.
- Next, prep the vegetables. Rinse, spin, or shake the arugula to remove excess water, then pat dry with paper towels.
- Slice the cucumber, chop the onion, and split the tomatoes in half.
- Slice the mango. Cut the mango gently around the pit with a sharp knife. Cut the mango halves into dice and reserve.
- Halve the avocado and scoop out the pit. Scoop out the avocados’ flesh with a tablespoon and chop them.
- Put the chicken chunks and all the vegetables into a big salad dish. Top with the poppy seed dressing.
- Make sure to thoroughly toss all the ingredients in the dressing.Have fun!
Notes
- Any other protein, such as prawns, can be used in place of the chicken.
- Use any other preferred greens. Other greens will also work well; we chose rocket.
- Add more vegetables, such as sweet peppers, if you want.
Storage:
Place leftovers in a container and store in the fridge for up to 3 days. Serve cold the next day. Do not freeze.
