Ingredients:
For the Chicken:
2 medium chicken breasts (about 400 g)
2 tbsp olive oil
Juice of 1 lemon
2 cloves garlic, minced
1 tsp dried oregano (or 1 tbsp fresh chopped oregano)
1 tsp dried thyme (or 1 tbsp fresh)
Salt & black pepper, to taste
For the Lemon Juice Dressing:
2 tbsp olive oil
Juice of 1 lemon
1 tsp Dijon mustard (optional)
1 tsp honey or maple syrup
Salt & black pepper, to taste
1 tbsp fresh parsley, chopped
Instructions:
Marinate the Chicken
1. In a bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
2. Add chicken breasts and coat evenly.
3. Let marinate for 30 minutes (or up to 2 hours in the fridge for more flavor).
Grill the Chicken
1. Preheat a grill or grill pan over medium-high heat.
2. Grill chicken for 6–7 minutes per side (depending on thickness) until fully cooked and internal temperature reaches 75°C (165°F).
3. Remove from heat and let rest for 5 minutes.
Prepare the Lemon Juice Dressing
1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
2. Stir in fresh parsley.
Serve
1. Slice grilled chicken and drizzle with lemon juice dressing.
2. Pair with a fresh salad, roasted vegetables, or steamed quinoa for a complete Mediterranean meal.
