Ingredients

For the Mediterranean Chicken

1 ½ lbs (680g) boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons olive oil

Juice of 1 lemon

3 cloves garlic, minced

1 ½ teaspoons dried oregano

1 teaspoon smoked paprika

¾ teaspoon salt

½ teaspoon black pepper

For the Yogurt Feta Sauce

1 cup plain Greek yogurt

¾ cup crumbled feta cheese

1 tablespoon lemon juice

1 tablespoon olive oil

1 small garlic clove, finely grated

2 tablespoons chopped fresh dill or parsley

¼ teaspoon black pepper

1–2 tablespoons warm water (to thin if needed)

For the Bowl Base

2 cups cooked jasmine rice, basmati, or quinoa

1 tablespoon olive oil

1 tablespoon lemon juic

Pinch of salt

Fresh Toppings

1 cup diced cucumber

1 cup cherry tomatoes, halved

½ cup shredded romaine lettuce

¼ cup thinly sliced red onion

¼ cup Kalamata olives

Warm pita bread, sliced

Fresh parsley for garnish

Directions

1. Marinate and Cook the Chicken

In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

Toss chicken pieces in the marinade and let sit for at least 30 minutes.

Heat a large skillet over medium-high heat.

Cook chicken 6–8 minutes until golden and internal temperature reaches 165°F (74°C).

2. Prepare the Yogurt Feta Sauce

In a bowl or food processor, combine Greek yogurt, feta, lemon juice, olive oil, garlic, herbs, and black pepper.

Blend or stir until smooth and creamy.

Add warm water gradually to reach a drizzle consistency.

3. Prepare the Bowl Base

Toss cooked rice or quinoa with olive oil, lemon juice, and a pinch of salt.

Divide evenly among serving bowls.

4. Assemble the Pita Bowls

Top grains with cooked Mediterranean chicken.

Add cucumber, tomatoes, romaine, red onion, and olives.

Drizzle generously with yogurt feta sauce.

Serve with warm pita slices on the side.

Grnish with fresh parsley and serve immediately.
