Mediterranean French Onion Chicken Casserole
A delicious one-dish meal combining tender chicken breasts, slowly caramelized onions, garlic, herbs, and a light Mediterranean-inspired cheesy topping. Comfort food without being heavy.

🛒 Ingredients
For the Chicken & Onion Base
2–3 chicken breasts (or thighs), skinless
2 large onions, thinly sliced
2 garlic cloves, minced
2 tbsp olive oil
1 tsp dried thyme
½ tsp dried oregano
Salt & black pepper to taste
½ cup low-sodium chicken broth
For the Topping
½ cup shredded mozzarella or part-skim cheese
2 tbsp grated Parmesan
1 tsp fresh parsley, chopped (for garnish)
Optional additions:
Mushrooms, sliced (½ cup)
Sun-dried tomatoes, chopped (2–3 tbsp)
🍽 Instructions
1. Caramelize the Onions
1. Heat olive oil in a skillet over medium heat.
2. Add sliced onions and a pinch of salt. Cook 15–20 minutes, stirring occasionally until golden brown and sweet.
3. Add garlic, thyme, and oregano in the last 2 minutes.
2. Prepare the Chicken
1. Preheat oven to 180°C (350°F).
2. Season chicken with salt and pepper.
3. Place chicken in a lightly greased casserole dish.
3. Assemble the Casserole
1. Spread caramelized onions over the chicken.
2. Pour chicken broth around the edges.
3. Sprinkle cheese evenly over the top.
4. Bake
Cover with foil and bake 25 minutes, then remove foil and bake another 5–10 minutes until cheese is bubbly and chicken is fully cooked (internal temp 74°C / 165°F).
5. Garnish & Serve
Sprinkle with fresh parsley and optional sun-dried tomatoes.
Serve warm with a side of roasted vegetables or a green salad.
💡 Notes & Tips
Use chicken thighs for juicier meat.
Make it vegetarian by substituting chicken with roasted cauliflower or chickpeas.
Keep it mild, no added chili.
Can prepare onions ahead to save time.
