Lemon Herb Chicken
4 chicken thighs or breasts
3 tbsp extra-virgin olive oil
Zest + juice of 1 lemon
1½ tsp dried oregano
1 tsp sweet paprika
2 garlic cloves, grated
Salt & black pepper
Roasted Mediterranean Vegetables
2 cups baby potatoes, halved
1 zucchini, thick slices
1 red bell pepper, chunks
1 small red onion, wedges
2 tbsp olive oil
½ tsp dried thyme

Creamy Whipped Feta
150 g feta cheese
½ cup Greek yogurt
1 tbsp olive oil
1 tsp honey (optional, kids love this)
Finish
Fresh parsley or dill
Extra olive oil for drizzling
👩🍳 Instructions
1️⃣ Marinate the Chicken
Mix olive oil, lemon zest & juice, oregano, paprika, garlic, salt, and pepper.
Coat chicken well and rest 15 minutes.
2️⃣ Roast the Vegetables
Preheat oven to 200°C / 400°F.
Toss vegetables with olive oil, thyme, and salt.
Roast for 30–35 minutes until golden and tender.
3️⃣ Cook the Chicken
Place chicken on a tray or pan.
Roast for 25–30 minutes (or pan-sear 6–7 minutes per side) until juicy and golden.
4️⃣ Make the Whipped Feta
Blend feta, Greek yogurt, olive oil, and honey until smooth and creamy.
5️⃣ Assemble (Mediterranean Style)
Spread whipped feta on a platter
Add roasted vegetables
Top with lemon chicken
Drizzle olive oil and sprinkle fresh herbs
