Ingredients
For the Whipped Ricotta:
1 ½ cups whole milk ricotta
2 tbsp extra virgin olive oil
1 tbsp lemon zest
1 tbsp lemon juice
1 clove garlic, roasted or fresh
Salt & black pepper, to taste
For the Board:
4–6 pita breads, warmed and cut into wedges
1 cup cherry tomatoes
1 cucumber, sliced into sticks or rounds
1 cup mixed olives (Kalamata, green, etc.)
½ cup roasted red peppers or sun-dried tomatoes
½ cup marinated artichoke hearts
½ cup nuts (pistachios, almonds, or walnuts)
Fresh herbs (parsley, mint, or dill)
Optional garnish: honey drizzle, za’atar, or chili flakes
Instructions
Make Whipped Ricotta
In a food processor, blend ricotta, olive oil, lemon zest, lemon juice, garlic, salt, and pepper until creamy and fluffy (1–2 minutes).
Transfer to a shallow bowl, drizzle with olive oil or honey, sprinkle with za’atar if desired.
Prepare the Board
Arrange pita wedges around the ricotta bowl.
Place vegetables, olives, roasted peppers, artichokes, and nuts in small piles or bowls around the board.
Garnish with fresh herbs.
